Introduction

This is the marinade for another recipe here on sparkpeople (Grilled Chipotle Chicken Breasts). It is a DELICIOUS marinade as well as DELICIOUS salad dressing! If you seperate the recipe into two, you can marinade 2-5 chicken breasts in half, and then baste with the other half. Ingredients

    5 chipotle (or jalapeno) peppers - seeded & chopped by hand
    1-3 cilantro leaves
    2 cloves garlic
    2 medium shallots
    1/3 cup rice vinegar
    1/4 cup olive oil
    Juice of 2 limes
    1t salt

Directions

Use gloves when working with peppers (trust me, I learned this the hard way...)

Puree peppers, cilantro, garlic, shallots & vinegar in food processor or blender. With machine running, add oil slowly & then lime juice.

Put into glass jar (or whatever container) and let refridgerate overnight so all flavors settle, and lime juice neutralizes peppers :-)

Makes approximately 12 servings....but I'll have to test it out...
