Ingredients

    escarole
    turkey sausage
    cannellini beans
    large can diced tomatoes
    garlic
    olive oil
    salt
    pepper
    spices

Directions

In a pot add olive oil, garlic and onion and chopped up turkey sausage.cook until soft(about 3 minutes) then add washed and chopped escarole (if your using frozen, make sure to thaw it first). As the escarole cooks down add the cannellini beans and diced tomatoes. Then add salt, pepper, and any other spices you want to your desired flavor level. This is a great recipe to use with spinach or any kind of leafy greens, and any kind of beans. experiment!
