Introduction

Fresh grated zucchini baked in a cinnamon flavored bread. Fresh grated zucchini baked in a cinnamon flavored bread.
Number of Servings: 22

Ingredients

    Wet Mix:
    3 eggs
    1 cup of oil
    2 cups of sugar
    3 teaspoons vanilla
    2 cups of grated zucchini

    Dry MIx
    3 cups of flour
    1 teaspoon of salt
    1 teaspoon of baking soda
    1/4 teaspoon baking powder
    3 teaspoon cinnamon

Directions

Mix the wet mix in a large bowl.
Mix the dry mix in a small bowl

Gradually beat in the dry mix into the wet mix.
Pour into floured pans (2 loaf pans)

Bake at 350 degrees F for 50 minutes.

Makes 22 1-in. slices

Note: Freezes great!
