Baked kale is really ugly, but amazingly both good for you and tasty! It shrinks in a big way (like spinach), but tastes good. Ingredients

4 oz. fresh Kale (weight is *after* removing stems*)
1 1/5 teaspoons olive oil
1 teaspoon cider vinegar
4 dashes salt (optional)
Directions
Preheat oven to 350 degrees
Tear kale into 2-3 inch pieces
toss in bowl with olive oil and vinegar
place on baking sheet (use either parchment paper or a quick spray of Pam/etc [not included in calorie counts]
cook and turn after first 10 minutes
remove to plate after 15 minutes
