Ingredients

    1-1/2 cups whole wheat flour (180 g)
    1 cup oat bran (110g)
    1/2 cup ground flax seed (45g)
    2/3 cup brown sugar (139g)
    4 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
    1/4 tsp. nutmeg
    3 eggs, beaten
    2 T. oil
    1-1/2 cups mashed bananas (355g)
    1-1/2 cups buttermilk
    3/8 cup orange juice concentrate
    1 tsp. orange flavoring
    l tsp. banana flavoring
    1 cup diced candied pineapple tidbits (172g)

Directions

Preheat oven to 375. Spray 24 muffin cups with non-stick spray. In a large bowl, combine dry ingredients. In another bowl, whisk together wet ingredients. Stir wet into dry just until combined. Stir in candied pineapple. Divide batter among the prepared muffin cups. Bake for about 20 minutes or until done. Makes 24 muffins.
