    For the crust:
    -1/4 cup sugar
    -2 tablespoons vegan margarine
    -3 tablespoons applesauce (the recipe calls for 5 T butter but this is lower fat)
    -1 cup flour
    -engerG egg replacer (or other egg sub) to equal three eggs
    3/4 cup granulated sugar
    -the zest and juice of 2-3 lemons
    -1 teaspoon vanilla
    -1/2 teaspoon baking powder
    -1/8 teaspoon salt
    -3 tablespoons flour


Mix all the crust ingredients together and then press into an 8x8 pan. Bake for 15 minutes at 350.
Beat EngerG egg replacer until frothy and then add the other ingredients. Pour into pan and bake for 20 minutes or until set.
