Introduction

A quick and easy vegetarian main or side dish made from whole grains. Use any assortment of mushrooms & substitute any whole grains. A quick and easy vegetarian main or side dish made from whole grains. Use any assortment of mushrooms & substitute any whole grains.

Ingredients

    2 Tbsp. Olive Oil
    1 small onion, chopped
    1 cup assorted mushrooms, chopped
    1/2 c. brown rice
    1/2 c. Bhutanese red rice
    1/2 c. pearl barley
    3 cups Vegetable broth

Directions

makes 5 1/2 cup servings

Heat olive oil & saute onions & mushrooms until soft in saute pan with cover. Add grains & saute until coated with oil. Add broth, bring to gentle simmer and boil until grains are soft (25 - 30 minutes). Add additional broth as needed.
