Ingredients

1 cup fresh mashed banana (about 3 small, very ripe)
1 cup Splenda
1/2 cup plain nonfat yogurt
4 tbsp margarine , melted
1 eggs
1 egg white
1 tsp vanilla extract
2 cup white all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup chopped walnuts
1 tsp Banana extract
Directions
1. Beat banana, Splenda,yogurt, margarine, egg, egg white, vanilla and banana extract at medium speed in large bowl until blended.
2. Add combined flour, baking powder, baking soda, and salt, mixing just until ingredients are moistened. Stir in walnuts, if desired.
3. Pour batter into one 8-1/2 x 4-inch greased and floured loaf pan, or three 5-5/8 x 3-1/4-inch loaf pans. Bake at 350 degrees F until bread is golden and toothpick inserted in center comes out clean, 55 to 65 minutes for large loaf, 35 to 40 minutes for the small loaves. Cool 10 minutes in pans on a wire rack; remove from pan, and cool.
4. Cut in 12 portions and freeze if needed for portion contron..
You can omit the nuts and remove a few more calories.
You can substitute all or part of the flour for a whole grain or soy flour.
