Ingredients

    I tsp. olive oil
    2 cloves of garlic
    28 oz. of diced tomatoes
    14 oz. can of stewed tomatoes
    1 can of chicken broth
    1 package of frozen spinach
    1 can of chickpeas

Directions

Drizzle the olive oil in a medium saucepan; add the two cloves of garlic, sauteeing it. Can add a shallot or onion if you choose... Add the cans of diced tomatoes, stewed tomatoes, can of chicken broth. Simmer. Rinse and drain spinach, then add to the soup. Simmer. At the end, add the chickpeas. Makes 8 1-cup servings.
