Ingredients

    1 tsp olive oil
    1 tsp chopped garlic
    1 medium onion, chopped
    5 cups eggplant, peeled and chopped (about 1 medium)
    1-1/2 cups chopped green peppers
    1 cup Newman's Own Marinara - or other kind

Directions

Use a large heavy-bottomed covered pan for this recipe. Hard anodyzed cookware such as Calphalon works best to minimize the amount of oil needed.

Use medium-low heat. Put the oil in the bottom of the pan, then add garlic and onions and cook 5-10 minutes until the vegetables start to soften. Add eggplant and cook 15 minutes more, stirring occasionally. The goal here is to gently roast the vegetables. Next add the green peppers and cook another 15 minutes or so until the vegetables are tender. Stir in the marinara sauce, reduce the heat, and simmer gently another 10 minutes or so.

Makes 5 servings - 1 cup each.
