Introduction

Great option for breakfast. Feel good about serving something fresh to your kids. Much better than packaged cereal bars. Careful, they are crumbley!! Ingredients

    Crust and Topping
    1 cup whole wheat flour
    0.5 cup Spenda Brown Sugar blend
    0.5 cup salted butter, cold, cut into cubes
    2.5 cups quick-cook oats
    2 tbsp apple or orange juice

    Filling:
    1/8 cup Spenda Brown Sugar blend
    2 Tbsp flour
    3.5 cups fresh blueberries, rasp or black
    1 Tbsp lemon juice

Directions

- Heat oven to 375 degrees. Grease a 9x13 pan
- Mix flour, brown sugar
- Cut in butter until crumbs form. (using a food processor makes this easier).
- Add oats
- Remove 1.5 cups of mix and set aside for topping.
- Add juice to the mix until moistened. Press into bottom of pan using your fingers or a measuring cup.
- For Filling: mix sugar, and flour.
- Add fruit and lemon juice, gently toss. Distribute the filling over the crust.
- Sprinkle the reserved crumb mixture over the filling.
- Bake until top is golden, about 35-40 minutes. Let the pan cool on a wire rack for about 2hrs. The cut the sheet into 24 bars. Store in the fridge in an airtight container.
