Introduction

This is a very pretty side dish. It goes together quickly once all veggies are cut per recipe. This is a very pretty side dish. It goes together quickly once all veggies are cut per recipe.
Number of Servings: 6

Ingredients

    2 cups sliced and quartered zucchini
    3 cups broccoli, separated into small heads (1" )
    1 cup red bell pepper, chopped
    1 cup onion, diced
    1 cup sliced mushrooms
    6 cups fresh spinach
    1/2 Tbsp olive oil (might try with just PAM...but nutritional data is with olive oil)

    Salt & Pepper to taste, also could add red pepper flakes (not in nutritional data)

Directions

Heat saute pan. Add olive oil. Add onions, mushrooms, zucchini, and bell pepper. Cook for about 5 minutes, until veggies are nearly cooked. Add broccoli and saute another 5 minutes. Add spinach, cover and simmer 3 minutes. Stir and enjoy. Makes 6 servings (3/4 cup)
