Ingredients

    Turkey breast meat, 2 1/2 oz
    Apples, fresh, 1 1/2 oz
    Pecans, about 5 or 6 halves
    Scallions, raw, 1 tbsp chopped
    Nasoya Nayonaise, Soy-based Sandwich Spread, 2 tbsp
    Lemon Juice, a dash
    Curry powder, 1/4 tsp (or more to taste)
    Salt and Pepper to taste

Directions

Cut Turkey breast meat into small cubes and put into a bowl. Lightly toast pecans, if you wish, and chop coursely. Add to turkey.
Slice apple thinly, then chop into about 1/4 inch pieces. (I like Granny Smith for this by the way)
Chop scallion. Add to bowl.
In a separate small bowl, mix Nayonaise, curry powder, and lemon juice, then add to turkey mixture.
Stir and serve! Add salt and pepper if you wish.
Some raisins would be a good addition to this if you like them, also dried cranberries would do well in this dish.
...and of course, you can use chicken!!

    Very Good
    I put a little celery and a couple olives. A good change up salad! - 1/12/18
