Ingredients

    2 portabella mushroom caps
    1 egg & 1 eggwhite - beaten
    4 cloves garlic, minced
    1 ancient sweet red pepper, diced
    2 cups fresh spinach, finely chopped
    1 oz. sharp, aged provolone shredded
    2 dashes salt
    1 tbsp olive oil
    pepper if you want.

Directions

Start by cooking portabella caps in 1 tbsp of olive oil. Keep to one side of the pan (you will flip them as necessary to keep them cooking evenly). On the other side of your pan cook garlic and red pepper. After 2 minutes or so add spinach. Salt lightly. After another minute or 2 add the beaten egg. Allow to cook for a minute or two. Flip and grate the cheese over top. After 1-2 minutes place mushrooms on plate, top with egg and veggies, melted cheese side up.
