Introduction

1) use 12 inch, flat-bladed metal skewers. Flat blades keep the food from spinning when you turn the kebab over.

2) Marinate beforehand with your favorite marinade, or baste while cooking. When you log the food, log the marinade (or basting sauce) separately.

3) Cook over medium heat. Medium-low works just as well but takes a couple of minutes longer. Do not cook higher than medium heat or you'll char the vegetables, and that char is bad for you (PAHs and acrylamide are not marinade ingredients).

4) If you use whole chickens for your breast meat, use the remainder as a soup base.

5) If you have extra vegetables, grill them. Sprinkle on a little garlic powder and Italian seasoning before grilling and serve as a side dish.

Ingredients

    1 pound of chicken breast. This can come as boneless, bone-in, or from whole chickens.
    Two medium zucchini
    Two medium bell peppers
    5 cherry tomatoes
    5 pearl onions

Directions

Cut all the fat off the chicken breasts and slice them into 15, one-ounce pieces. (If you're marinating, at this point put the chicken in the marinade for an hour).

Wash and slice the zucchini into 1/2" slices. Wash and seed the peppers, and then cut them into 1" squares.

Place the meat and vegetables on the skewers, making sure you get three pieces of chicken on each skewer. I like to alternate the vegetables with the chicken. One example:

Chicken, zucchini, pepper, onion, chicken, zucchini, pepper, cherry tomato, chicken

Cook over medium heat for about ten minutes, turning every two or three minutes OR two minutes per "side".

Makes five, one-foot chicken kebabs, one per person.
