Ingredients

Spinach, fresh, 4 cup
Onions, raw, 1 cup, chopped
Garlic, 2 Tbs.
Mushrooms, fresh, 1 cup, chopped
Cilantro, raw, .25 cup
Tostada, GUERRERO Toasted Corn, 6 each.
La Victoria Diced Green Chiles, 1 cup
*Tillamook Medium Cheddar Cheese, 2 oz
*Tillamook Pepper Jack Cheese, 2 oz
Beans, black, 1.25 cup
Beans, red kidney, 1.25 cup
Foster Farms Extra Lean Ground Turkey, 16 oz
*sliced black olive, 4 tbsp
Directions
Preheat oven to 425 F.
Coat a large skillet with non stick cooking spray. Saute onions , mushrooms and garlic over medium heat until onions are clear, about 3 minutes. Stir in chiles, spinach and cilantro. When spinach has reduced, remove from heat and set aside.
Using the same pan, brown turkey.
Lightly coat a rectangular cake pan with non-stick spray. Spoon in the precooked filling from the stove and spread evenly. Spread beans on top of filling. Cover with enchilada sauce. Layer with pepperjack cheese. Lay six tortillas on top of cheese. Top with precooked ground meat . Pour enchilada sauce over meat. Sprinkle cheddar cheese on top. Garnish with sliced olives.
Place in oven and bake for 30 minutes, until cheese is golden brown.
