Ingredients

1 can black beans, drained, rinsed
1 tsp cumin
1 tsp minced garlic (roasted is yummy)
2 egg whites
1 1/3 cup shredded zucchini
1/2 cup whole grain bread crumbs
2Tbl olive oil
Directions
Black Bean Cakes
1 can black beans, drained, rinsed
1 tsp cumin
1 tsp minced garlic (roasted is yummy)
2 egg whites
Roughly mash these ingredients together and add:
1 1/3 cup shredded zucchini
1/2 cup whole grain bread crumbs
Mix together and divide into 8 balls. Heat 1 Tbl olive oil on a medium high griddle and place balls of bean mixture on griddle. Flatten to 3" rounds and cook until golden (~4 minutes/side). Serve with lowfat plain greek yogurt and favorite salsa.
Serving ideas:
These were yummy with fish tacos. You could serve as the main course with a green salad for a tasty vegetarian meal. Try as a vegetarian burger with your favorite healthy toppings. If you are not a greek yogurt fan yet, try it as a snack with fresh berries and honey or granola. Its a great substitution for sour cream as a topping and in cooking. Also, season with fresh herbs and spices for a dip for vegees and pita. Enjoy!
