Introduction

This can be made with any type of onion. I prefer to use purple or red whenever possible in my cooking. this makes an excellent side dish! This can be made with any type of onion. I prefer to use purple or red whenever possible in my cooking. this makes an excellent side dish!

Ingredients

    2 tbsp Extra Virgin Olive Oil
    1 large onion
    3 large zucchinis (about 14 cups)
    1 Tbsp Italian Seasoning
    1 tsp seasoned salt

Directions

Heat olive oil in large pot.
Cut up onion and add to pot.
Salt the onions.
Cut zucchini into slices about 3/8 to 1/2 inch thick, then quarter the slices.
Add zucchini to pot.
Sprinkle the Italian Seasoning over the zucchini.
Cover and cook over medium heat until zucchini is cooked through, (about 30 minutes), stirring occasionally.

Yields about 9 - 1 cup servings.
