Introduction
great healthy recipe for use with fresh or frozen blueberries. Ingredients

1 and 2/3 cup Nonfat Yogurt (i used dannon light & fit vanilla)
Baking Soda, 2 tsp
Brown Sugar, .25 cup, packed
Egg, fresh, 2 large
Canola Oil, .25 cup
Applesauce, unsweetened, 1 cup
Vanilla Extract, 2 tsp
All Natural Wheat Bran, 2 cup
Whole Wheat Flour, 1 cup
Flour, white, 1 cup
Baking Powder, 4 tsp
Blueberries, frozen (unsweetened), 1.5 cup
Semisweet chocolate, .25 cup mini chips
Directions
1. Preheat oven to 350°.
2. Line 12 muffin cups with paper liners or spray with Pam.
3. Measure yogurt into medium bowl and mix in baking soda, it will foam and it is supposed too; set aside.
4. In a large bowl beat together sugar, eggs, applesauce, and oil.
5. Add bran and vanilla.
6. In a separate bowl mix together flour and baking powder.
7. Gradually add the flour and yogurt mixtures alternately to the sugar mixture.
8. Fold in blueberrie (and chips if desired)
9. Bake about 20 minutes.
10. Makes 12 very large muffins (I got 21 regular size muffins and that is what i used when calculating nutritional info)
