Ingredients

    1/2 cup sugar
    1 1/2 Tbs Smart Balance spread
    1 egg, beaten
    1/2 cup blackstrap molasses
    1 1/2 cups milk, non fat
    1 Tbs. cider vinegar
    1 cup white flour
    1 cup whole wheat flour
    1/4 cup flax seed meal
    1/4 cup corn meal
    1/4 cup oat bran
    1/2 teas salt
    1 teas baking soda
    1/2 cup chopped nuts
    1/2 cup raisins, packed

Directions

Mix together all ingredients. Grease a 1 pound coffee can or steaming mold well and pour in batter. Cover with mold lid or tightly wrapped tin foil. Place in pressure cooker with water about 1/2 way up the side of the mold. Cover, vent steam for 10 minutes, then place weight on stem. When up to 10 pounds pressure cook for 40 minutes. Allow pressure cooker to cool enough to lose pressure, remove mold and remove bread from mold while hot. Makes 12 slices.
