Ingredients

    1 Can Crisp Corn, Drained and Rinsed
    1 Can Shoepeg Corn, Drained and Rinsed
    1 Can Blackeyed Peas, Drained and Rinsed
    2 Bunches Green Onion, Chopped
    1 Large Sweet Onion, Chopped
    3 Stalks of Celery, Chopped
    1/2 Red Pepper.Chopped
    1/2 Orange or Yellow Pepper, Chopped
    5 Jalapenos, Chopped
    1 Bunch Parsley, Chopped
    4 Roma Tomatoes, Chopped
    1 Bottle Zesty Italian Mediteranean Dressing

    Optional- Hot Sauce or Cayenne to taste
    Salt and Pepper to taste

Directions

Mix all ingredients and marinate in the refrigerator for 12-24 hours before serving. Perfect amount to make a large bowl to serve at a barbecue or party with tortilla chips of your choosing. For a healthier version, toasted pita triangles are great with it.
