Ingredients

    1 Lg. Onion ( chopped )
    1/2 C. Green Pepper ( chopped )
    1 clove Garlic
    2 Tbls. Canola Oil
    1 Can Diced Tomatoes
    2 Cans Red Beans
    1 C. Arborio Rice
    3 Johnsonville New Orleans Andouille
    3/4 C. Chicken Broth
    2 C. water
    1/2 Tsp. Emeril Bayou Blast
    Pepper to taste

Directions

Cook the Arborio rice in 2 C. water. In dutch oven Saute onion, garlic & green pepper in 2T. canola oil. Add 3 sliced Andouille sausages to pot. Add 1 can diced tomatoes, 2 cans red beans & 3/4 C. chicken stock. Then add cooked rice, add spices to your taste. Cover, simmer for approximatly 45 mins.
