Ingredients

    1 1/2 Tbsp olive oil
    1 large yellow onion, thinly sliced
    2 c sliced mushrooms
    2 tsp curry powder
    1/2 c plain yogurt, low fat
    3/4 c half and half
    1/2 tsp kosher salt
    1/2 tsp black pepper
    1 can (14.5 oz) diced tomatoes
    12 oz of rotisserie chicken, skin removed

Directions

Heat the oil in a large skillet over medium-low heat. Add onion & mushrooms and cook, stirring occasionally for 8-10 min. Sprinkle with curry powder and cook, stirring for 1 minute. Add the yogurt and half & half and simmer gently for 3 minutes. Stir in the salt, pepper, and tomatoes. Shred the chicken, discarding the skin and bones. Mix chicken into the mixture. Heat through and serve over rice.

Makes 4 servings
