Ingredients

200g macaroni (dry weight)
Ingredients for the sauce:
400ml skimmed milk
40g plain flour
20g margarine
½ tsp mustard powder
20g parmesan cheese, grated
25g reduced fat cheese, grated
Black pepper
Topping:
4-5 fresh tomatoes, sliced
Mixed herbs
Garlic powder (optional)
Directions
Pre-heat the oven to Gas Mark 5 / 375F / 190C.
Boil the macaroni in salted water, according to the packet instructions.
Put the milk, flour, margarine and mustard in a saucepan and slowly bring to the boil, whisking constantly, until it starts to thicken.
Simmer the sauce for 10 minutes until the flour is cooked, continuing to whisk constantly.
Add the grated cheese and stir until melted.
Add pepper to taste.
Add the cooked macaroni to the cheese sauce and mix thoroughly.
Pour the macaroni and cheese into an oven-proof dish and top with the sliced tomatoes.
Sprinkle over the mixed herbs and garlic powder, if using.
Bake in the oven for 40 minutes until the tomatoes are beginning to brown.
Serve with a side salad or your favourite vegetable.
