I like this with Salmon too but I show it here with Tuna cause that is what most people have already handy in the cupboard! Substitutions will change the nutritional data so please recalculate to get the correct info. Ingredients

    Tuna Cakes:

    3 5oz cans tuna drained (aprox 12 ozs tuna once drained)
    1/4 cup bread crumbs
    1 egg
    1T parsley (dried)
    1T lemon juice
    1/4t black pepper
    1t onion powder

    2T extra virgin olive oil

    Mushroom Cream Sauce

    1 can Campbell's 98% Fat Free Condensed Cream of Mushroom Soup (aprox 1 1/4 cup)
    1/2 cup skim milk
    1/2 cup frozen(or fresh) peas

Directions

To make cream sauce, combine soup, milk and peas in pot and turn on med-low heat. Allow to simmer until sauce is heated through and peas are done. (If sauce is too think you can add water to thin it out...I like the sauce to be thick personally)

To make patties combine all ingredients except for the olive oil in a bowl and knead until mixture starts to stick together. Form mixture into six patties (aprox 2 ozs per patty). Heat oil in pan on stove over med to med-high heat. Fry patties on stove aprox 3-5 minutes on each side or until golden brown.

Serve patties topped with the mushroom cream sauce

Makes 6 servings 1 patty topped with aprox 1/3 cup sauce.

These can also be baked in the oven to save a little fat if you want though I think they taste better fried in the olive oil and olive oil does have heart healthy Omega-3's!

    These were tasty for a nice change. I skipped the sauce listed here and put on a bun with 1 TBSPN low cal miracle whip. Yum! - 3/5/10
