Ingredients

1/4 cup dry white wine
2 tsp snipped fresh thyrme or 1/2 tsp dried thyme, crushed
4 medium skinless, boness chicken breast halves (about 1 pound total)
4 thin slices prosciutto (about 1 ounce total), trimmed of fat
2 oz fonitna cheese, thinly sliced
1/2 of a 7 oz jar roasted red sweet peppers, drained and cut into thin strips (about 1/2 cup)
Directions
1. For sauce, in a small bowl combine wine and thyme. Set aside.
2. Place each chicken piece between 2 pieces of plastic wrap. Use the flat side of a meat mallet to pound chicken into rectangles about 1/8 inch think. Remove plastic wrap.
3. Place a slice of prosciutto and one-fourth of the cheese on each chicken pieces. Arrange one-fourth of the roasted peppers on cheese enar bottom edge of chicken. Starting from bottom edge, roll up chicken; secure with wooden toothpicks.
4. Grill over medium heat for 15 to 17 minutes or until chicken is tender and no longer pink, turning to cook evenly and brushing twice the sauce up to the last 5 minutes of grilling.
Garnish with addition fresh thyme if desired.
