Ingredients

    1/4 cup EVOO
    1 head of chopped white cabbage
    1 can of corn
    .5 cup chopped scallions (or any onion)
    1.5 cups chopped yellow/summer squash
    2 cup chopped zucchini
    1 can diced tomatoes
    1 tbsp garlic powder
    2 tsp black pepper
    2 cups veggie broth
    salt

Directions

Heat oil in medium sautee pan, add scallions. Cook for 2 minutes until wilted. Add cabbage, zucchini, and squash, sautee - about 10 minutes, add in corn, tomatoes, garlic powered, broth and simmer until squash is tender.

Make about 6 1.5 cup servings.
