Ingredients
-
4 Large Eggs
2 Medium potatoes sliced or diced
1 Plum tomato
1 cup fresh spinach
1/2 Medium onion
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
salt and pepper to taste
Directions
-Bake or boil the potatoes until they are cooked. Slice or dice into small pieces.
-Spray skillet with cooking spray and turn on medium heat.
-Add potatoes to pan, cook for a few minutes, and spread to the outside of the pan.
-Saute onions in the center of the pan until they are translucent. Toss with the potatoes. Push mixture to the side of the pan.
-Add spinach to the pan and saute until cooked/wilted. Toss in with potato/onion mixture and push mixture to the side.
-Slice or chop tomatoes and add them to the pan. Cook until soft. Toss into mixture.
-Beat eggs in a small to medium mixing bowl. Add garlic powder, salt, and pepper. Add eggs to potato mixture.
-Constantly stir mixture until eggs are cooked.
-Add salt and pepper to taste.
Enjoy!
