Ingredients

1/2 C Unsweetened Orange Juice
1/2 C Barbeque sauce
4 Pink Salmon Fillets
4 C Couscous, cooked
4 C Broccoli, cooked
Directions
Combine Orange Juice and Barbeque Sauce in a large ziplock baggie. Put Salmon fillets in the bag and allow to marinate for 1 hour.
Preheat Broiler.
Prepared Coucous according to package directions.
Boil water. Place Broccoli and boiling water and allow to cook until soft.
Meanwhile, after the Salmon has finished marinating, remove it from the bag and place it on a sprayed baking sheet. Place in oven and broil for 5 minutes. (Make sure oven is cracked open) Flip Salmon and allow to broil for another 5 minutes, or until the Salmon looks only slightly pink towards the middle.
Remove Salmon, it will continue to cook OUT of the oven for a few minutes.
Serve 1/2 a fillet on 1/2 C bed of Couscous with 1/2 C broccoli. Add some lemon juice if you'd like.
Serves 8.
