Introduction

Ingredients

3 over-ripe bananas
1/2 cup oil
2 large eggs
2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup sugar
1 cup walnuts
Directions
Mash bananas in mixing bowl, then add oil and eggs. Beat to combine.
Mix together flour, baking soda, baking powder, salt and sugar. Then combine with banana/egg mixture.
Stir in walnuts.
Bake @375 in prepared mini-muffin pan for 18-23 minutes.
Note: prepare mini-muffin pans with crisco and flour to prevent sticking.
