Introduction

Ingredients

1 1/2 c. edamame, shelled
1/2 c. frozen corn
2 c. chopped broccoli
7 baby carrots, chopped
1/4 onion, chopped
1 c. spinach, sliced thin
2 c. cooked brown rice
1 egg
2 egg whites
1/2 tsp grated ginger root
4 tbsp soy sauce
2 tsp sesame oil
1/2 tbsp sesame seeds
Directions
1. Place all veggies, except spinach, in a bowl and cover with plastic wrap. Microwave for a couple min until soft.
2. Heat a lg nonstick skillet on med high heat and spray w/ cooking spray. Add veggies and rice, stir until warm.
3. Place egg and egg whites in a bowl and lightly beat. Make a well in center of rice in the pan and add the eggs. Scramble and incorporate into the rice.
4. Add ginger, soy sauce and sesame oil. Stir in. At last minute, add spinach and stir until it wilts.
