Ingredients

    1 package Couscous (3 cups prepared)
    1/4 cup Rice Wine Vinegar
    1/4 cup Light Mayo
    1 Tbsp. Curry Powder
    1 teas. Garlic Powder
    1 teas. Dry Mustard
    Salt & Pepper to taste
    2 Tbsp. Capers
    4 Hearts of Palm (chopped)
    15 oz. Marinated Artichoke Hearts (drained & copped)
    1 Red Bell Pepper (chopped)
    6 Green Onions (chopped)
    1/2 cup Green Olives (chopped)

Directions

Prepare couscous according to package directions. In a medium bowl, whisk together vinegar, mayo, curry powder, dry mustard, garlic powder, salt, & pepper. Combine prepared couscous with vinegar/mayo mixture. Add remaining ingredients and stir well. Refrigerate for 4-5 hours to allow flavors to blend. Enjoy!
