Ingredients

    potatoes:
    2.5 lb sweet potato, peeled and chopped
    1 cup ff 1/2 and 1/2
    3/4 c packed brown sugar
    1 tsp salt
    2 tsp vanilla
    2 large eggs
    cooking spray

    topping:
    1.5 c mini marshmalllows
    1/4 c flour
    1/4 c packed brown sugar
    1/4 tsp salt
    2 tbls butter, chilled and chopped
    1/2 c pecans, chopped and toasted

Directions

1. Preheat oven to 375
2. Boil potatoes for about 20 minutes or until soft. Drain.
3. While cooking, make topping: mix flour, sugar and salt. Cut in flour, then stir in pecans.
4. Mix potatoes, 1/2 and 1/2, sugar, salt and vanilla. Add eggs and mix well.
5. Pour into 9x13 dish coated with cooking spray. Sprinkle with marshmallows then topping.
6. Bake 30 minutes or until golden brown.

Makes 12 3x3inch servings

    I too thought the consistancy was kind of thin. I also found the texture a little grainy. It had a good taste but was just not what I was expecting. - 12/23/08

    The taste was very nice. However, on the day it was served it was thinner than I would have liked. When reheated the next day the consistency was thicker. I wish it had been like that when I served it to my guests! - 11/28/08
