Introduction

This is a variation on the basic scone mix I received from a friend, and my attempt to immitate the apple oatmeal scone from the farmer's market. This is a variation on the basic scone mix I received from a friend, and my attempt to immitate the apple oatmeal scone from the farmer's market.
Number of Servings: 16

Ingredients

    3 cups whole wheat flour
    0.5 cup sugar
    1 cup oats
    1 cup apples, diced
    0.75 cup buttermilk, low fat
    0.5 cup shortening
    1 tsp salt
    1 tsp baking soda
    2 tsp baking powder
    2 eggs

Directions

Mix all ingredients together by hand. Mixture should be crumbly. Do not over mix!

Spray Pam on a regular sized ice cream scoop to drop mixture on ungreased baking sheets. Or lightly shape into balls just smaller than your fist.

Bake at 375 degrees for 16 minutes. Insert a toothpick to be sure they are done. When ready, they will be a light golden brown.

    LOVED these. I halved the recipe and came up with exactly 8. Used milk and vinegar also for the b milk. Also added about a teaspoon of apple pie spice. - 2/16/19

    This was a huge hit. I didn't have buttermilk, so I used 1% milk and a tsp of vinegar. I used butter instead of shortening and added about 3 tbsp of spices (cinnamon, nutme). I made these for friends on Saturday morning and they were gone by noon. - 10/5/12
