Ingredients

    1 T olive oil
    1 cup brown rice
    1/4 t ground ginger
    1/4 t ground cinnamon
    2 cups reduced sodium chicken broth
    1/3 c currants
    1/3 c craisins
    1 apple cut up

Directions

In a saucepot over medium high heat add oil. Saute rice, ginger and cinnamon for a minute. Add brothand bring to a boil, stirring to combine. Reduce the heat to med low, and cook for 30 mins, or until the broth is absorbed and the rice is tender. Stir in the apple, currants and cranberries. Cover and let sit for 1 min.
