Ingredients

    Ice Cream:

    2 cans lite coconut milk
    3/4 cup sugar
    2 T alcohol (something hard, vodka, rum, bourbon. it acts as an antifreeze and makes it creamy.)
    1 T coconut extract (we make our own.)

    Pineapple:
    10 pineapple rings, fresh or canned
    1/4 c rum
    2 T brown sugar
    1 T cinnamon

Directions

Preheat broiler

Combine all ice cream ingredients and prepare according to your ice cream maker's instructions.

While ice cream is mixing, dredge rings in rum. sprinkle brown sugar and cinnamon on top. Spray a baking sheet with non-stick spray and broil until sugar melts and/or top browns.

Serve 2 pineapple rings with a small (1/5 of total) scoop of ice cream.
