Ingredients

    1 cup shredded cheddar cheese (low fat if youd like)
    1 chicken breast
    2 tsp fajita seasoning

Directions

Slice chiken in small pieces like you would use for fajitas. Add to med-high heat skillet. Cook until no longer pink. After chicken is cooked add fajita seasoning according to directions from package. Move cooked chicken pieces to the side. In skillet, sprinkle shredded cheese to make about a 4 inch circle. Depending o how big your skillet is you may can do more than 1. Remove skillet and cool until hard enough to remove, but still pliable. Wrap your chicken into the cheese chip and its a chicken taquito without the tortilla. This is my original recipe I developed while playing inthe kitchen. This is a serving for 1 but you can make as much as you'd like.

    It is the cheese that is high in calories and sodium. If you choose low fat cheese the calories drop down to 283 but the sodium stays over 1000mg. So unless you can find a low sodium cheese there isn't much you can do about the sodium in this recipe. Sounds yummy. - 1/15/08

    I would not worry about the calories or sodium because there is no way they are that high for this dish. Some input error or the calculator is defective. Still it sounds too good not to make. Maybe tomorrow. - 9/17/07

    I agree there must be a misprint in the calories, but I am also not getting where the "cheese chips" come from??? - 8/29/07
