Ingredients

    6 medium potatoes sliced thinly
    3 medium sweet peppers chopped
    1 large onion chopped
    6 Cups Approx. zuchinni chopped
    1 lb. Ground Turkey 93% lean Browned
    2 Tbls Extra Virgin Olive Oil
    2 Tbls Italian Seasoning Herbs
    1 Tbls Nature's Season Seasoning

Directions

Wash and chop vegetables, place in large bowl. Brown Ground Turkey. Mix with Veggies. Toss with Olive Oil and seasonings. Put in a large baking dish. Cover with Foil. Bake at 325 for approx. 60 min. or until veggies are tender.

Makes approx. 16 one cup servings.

    The flavors of this recipe are very nice but it seems to be missing some wow factor. Also, next time, I will stir the dish several times so the potatoes cook evenly. - 8/27/09

    Incredible!
    Made this for dinner tonight, DELICIOUS meal! I used 99%/1% ground turkey and I added 1 can cream of celery soup mixed with can full of skim milk. Then topped with low fat mozzarella cheese the last 10 minutes of cooking time. Served with side of low fat cottage cheese. YUMMMMM! Hubby even enjoyed! - 3/25/13
