Introduction

The flavors of this dish are distinct but not over powering. This rice would be delish with BBQ Chicken, Honey Soy Salmon, or really anything else so long as the flavors are complimentary. Ingredients

    1 Cup of Sushi Rice a.k.a Cal Rose
    1 12oz can of Coconut Milk
    1 cup of Water
    2 Chicken Bouillion Cubes
    1/2 Cup of Sweet Onion, diced, such as Walla Walla
    2 Tbl Paprika, smoked would probably also work well
    1 Tbl Concentated Lime Juice
    WHITE Pepper, Salt and Cayanne to taste

Directions

1.) Dice Onion and throw into pan with butter, saute until translucent (about 3-4 minutes)
2.) Place all ingredients, EXCEPT LIME JUICE.
3.)Bring to a boil with lid on then turn to low.
4.) When there is still a little bit of liquid sitting on top of the rice (about 15-20 minutes later) turn off rice and let sit with lid on (do not open) for 15-20.
5.) Add lime juice, fluff and serve.

***As you can see I used Sushi rice, which means because it is more glutionous will be higher in calories. But it is TOTALLY WORTH IT! :) If regular rice is desired simply cook as according to package recommendations****
