Ingredients

    For the dough:
    2 cups warm water
    1 tbsp active dry yeast
    2 tsp. palm sugar
    1 tbsp. honey
    3.5-4 cups whole wheat flour
    2 tbsp. vital wheat gluten
    1.5 tsp. kosher salt

    For the soak:
    1/2 cup baking soda
    10 cups boiling water

    To top:
    1 egg beaten
    Salt, sugar, cinnamon...anything you like!

Directions

Mix 2 cups water with 2 cups flour, yeast, and sugar. Set aside in a warm place for 40 min.

Add the honey, salt, and remaining flour. Turn out onto a floured surface and knead until smooth and elastic.

Let the dough rise for 1 hour.

Divide into 13 equal pieces, roll out and shape into pretzels.

Prepare the soak by bringing 1/2 cup of baking soda and 10 cups of water to a boil. Gently dip each pretzel into the soak for 30 seconds and then move to a parchment-lined baking sheet. Be sure to allow the pretzels adequate space to rise in the oven. I normally put 6 on a cookie sheet.

Brush the pretzels lightly with the egg wash and top as desired. My favorite combination is chopped fresh rosemary and coarse salt.

Bake for 15-20 minutes at 400 degrees F. Rotate the pans half-way through for even cooking.

Makes 13 pretzels.
