Introduction

I use this as a side dish with turkey meatballs. I use this as a side dish with turkey meatballs.

Ingredients

    2 cups Trader Joe's Brown Basmati Rice
    4 cups Trader Joe's Low Sodium Chicken Broth
    1 tablespoon Olive Oil
    1/2 cup carrot, raw, diced
    1/2 cup fresh broccoli, chopped
    1/4 cup onion, chopped
    1/4 cup chopped fresh parsley

Directions

Combine all ingredients in covered casserole. Bake in 325˚F oven for 45 minutes. Remove from oven and stir with fork before serving. Makes 6 1-cup servings.

    I sauted onion, carrots & one clove minced garlic in one tsp olive oil. Added 2 tbsp curry pwdr and 1/3 c raisins. Used 1/2 the amount stock & rice (only 2 people here). Yummy! I've been looking for a way to make rice pilaf @ brown basmati and not in the microwave. This recipe was a great base! - 11/7/10
