Introduction

The strawberries add enough bulk to make 10 generous sized muffins that are not even 115 calories each! They are also made with whole wheat flour, and without sugar, butter or oil, resulting in a delicious recipe that you couldn't feel guilty about if you tried.

If you do find that it isn't quite sweet enough, adding 1/4 cup sugar to the flour mixture in the beginning will only increase the calories to 133 per muffin. Enjoy!

Ingredients

    2 overripe bananas
    1.5 c whole wheat flour
    2 tsp baking powder
    3/4 cup (about 9) strawberries, chopped
    1 container strawberry yogurt
    1/2 cup 1% milk
    1 tsp cinnamon
    1 tsp nutmeg
    1 tsp ground ginger
    1 tsp vanilla
    1 egg
    A dash of salt

Directions

Preheat oven to 350 degrees F.
Whisk together flour, baking powder, ginger, cinnamon, nutmeg,and a dash of salt. Set aside.
Mash the bananas and then add yogurt, strawberries, egg, milk, and vanilla. Mix well.
Add the flour mixture slowly, being careful not to overstir.
Coat a muffin tin with non-stick cooking spray. Spoon batter into tin.
Bake at 350 for 25-30 minutes or until done.
Makes 10 muffins.
