Ingredients

Ingredients:
1/3 cup pistachio nuts, finely chopped
bread crumbs, made from 2 slices whole wheat dry bread
1 Tbsp Dijon mustard
1 Tbsp olive oil
1 Tbsp honey
salt (2 dashes)
pepper (2 dashes)
2- filets of tilapia (6oz)
Directions
Directions: Pre-heat oven to 475°F.
Lightly coat a baking sheet with cooking spray
Mix together chopped pistachios and bread crumbs in shallow bowl.
(make bread crumbs by placing 2 slices of dry day old bread into a brown paper bag for a few days... Place bag on counter top and roll with a rolling pin to crush bread.)
In a separate bowl, stir together Dijon mustard, olive oil, honey, salt and pepper until smooth.
Place filets on the prepared baking sheet.
Brush mustard mixture on to tops of fish.
Then evenly sprinkle with nut-bread crumb mixture. Brush any loose crumbs toward the filets to prevent burning.
Place into pre-heated oven . Turn the oven down to 375°F. Bake until the fish is done, about 15 minutes.
Makes 2 servings may easily double to serve 4
