Introduction
I made up this recipe while trying to use up an abundance of peppers and other produce from the farmer's market. For those who like really hot chili, you may need to add a more red pepper flakes or chili powder to suit your taste. Add a bit of chopped, fresh cilantro for a garnish if desired.Also, if you are looking for recipes that will freeze well, this one is great for freeze and reheat convenience. Ingredients

* Beans - Red Kidney Eden Organic, 6 cup
* Tomato Paste, No Salt Added, about 4 oz or 1/2 c
* Tomato Sauce, No Salt Added, 1.5 cup
* Green Peppers (bell peppers), 1 cup, strips
* Peppers, sweet, red, raw, sliced, 1 cup
* Jalapeno Peppers, 1/8 cup, sliced
* Yellow Peppers (bell peppers or banana medium hot), 1 cup
* Celery, raw, 1 cup, diced
* Onions, raw, 1 cup, chopped
* Sweet Corn, Fresh, 1 cup
* Garlic 3 cloves
* 1 t crushed red pepper flakes
* 1/2 t chili powder
* 2 c Vegetable Broth
*1 T Unsweetened Cocoa Powder
Directions
Chop onions, garlic and celery
Saute the onions, garlic, crushed red pepper and celery in some olive oil
Dice all peppers and add to the pan
Cook until peppers are soft
Add tomato sauce, broth, and paste
Add kidney beans
Add corn
Add cocoa powder
Allow to simmer an additional 10-15 minutes.
Add a bit of water or additional broth if it is too thick for your taste.
Makes approx. 8 (1 1/2 cup) servings.
