Number of Servings: 4

Ingredients

    Filling:

    1 1/2 cup shredded chicken breast
    1/2 medium red onion - chopped
    3 tbsp canned diced green chili
    2 tbsp extra virgin olive oil

    Sauce:

    1 19oz can La Victoria green enchilada sauce
    1/2 cup Knudsen light sour cream
    4 wedges laughing cow original swiss

    12 6" corn tortillas
    4 oz fat free jalapeno jack


Directions

Cook onion in olive oil until tender. Add diced chili & chicken. Heat through.

For sauce, heat enchilada sauce over low heat. Add sour cream and laughing cow. heat until laughing cow is melted and blended together.

heat tortillas in microwave for 1 minute.

Dip 1 tortilla in the sauce and fill with 2 tbsp of chicken mixture. Roll and place seam side down in 13x9 glass baking dish. repeat until you have 12 enchiladas. Cover with the rest of the sauce and sprinkle with the jalapeno jack cheese.

Cook 20 minutes in 375 oven

    The sodium count seems extremely high for one serving. Are you sure they're correct. Would love to try the recipe providing the sodium was a lot lower. - 10/30/10

    Incredible!
    These taste just like the full-fat version I used to make! I used the light laughing cow cheese, fat free sour cream, and added plenty of chopped jalapenos and cilantro. Fantastic recipe!! - 6/8/10
