Ingredients

Egg beaters 1-Cup
Cherry Tomatoes 1/4 Cup chopped
Mushrooms 4-diced
Red/Yellow Bell Peppers 1 Cup
Cooked Broccili 1-Serving (1 Cup)
Directions
Heat up pan with pam cooking spray on med heat
2-Cut up veggies while pan is heating
3-Add all ingredients except for 1/2 C of peppers and 1/2 C broccoli. Season to taste.
4-Cook omelet until done
5-While omelet is cooking, cook remaining broccoli in glass bowl with light water (Steam)
6-Add omelet, fresh peppers, and cooked broccoli to plate with a glass of large water. On omelet, add fresh salsa sweetened with apples. See my apple salsa recipe.
Note: Diced/blended tomatoes may cause omelet not to look the prettiest but tastes great. Add onions as desired to omelet.
