Ingredients

    12 oz whole wheat fettuccine, linguine, or other pasta of your choice
    1 tablespoon olive oil
    9 oz shrimp, peeled, de-veined, and thawed
    8 oz sliced mushrooms (optional)
    1 can diced tomatoes, drained or 2 diced fresh roma tomatoes (optional)
    2 cups fresh spinach leaves (optional)
    8 oz neufchatel cheese or other low fat cream cheese
    1/2 cup parmesan cheese
    5 cloves garlic, minced
    1/4 cup finely chopped onion
    1 cup fat-free, low sodium chicken broth

Directions

Cook pasta as directed on package. Heat oil in LARGE skillet, and add shrimp, garlic, mushroom and onion. Fry 1-2 minutes or until tender. Add cream cheese and chicken broth, cook and stir 3-4 minutes or until cream cheese is melted. Add parmesan cheese, tomatoes and spinach. Stir. Drain pasta and place in large bowl. Pour contents of skillet over pasta, toss and serve.
