Introduction

Make with rainbow rotini pasta--or even better is a Christmas Tree shaped pasta found in specialty shops. The red and greens are very festive. I use Best Foods Canola Mayonnaise which is half the calories of regular mayo--you could go fat free or olive oil mayo too. I'd like to try it with plain yogurt, but haven't yet. Ingredients

    2 cups Rainbow pasta, measured dry--cook it, rinse it to cool it--but don't mix with other ingredients until right before serving time.
    2 cups red apples,cubed (Gala or Fuji are good)
    1 cup celery,chopped
    1/2 cup slivered almonds (or walnuts)
    1 cup mayonnaise
    2 Tbsp lemon juice
    1 tsp sugar

Directions

Cook pasta in 4 quarts salted boiling water for 7-8 minutes. Drain when done.

Mix all the ingredients except the pasta together in a large bowl. Put the bowl in the fridge to chill. Just before serving time, cook the pasta according to the directions. Rinse with cold water until cool. Drain. Add the cooked pasta to the other ingredients, toss gently and serve. (Or cook pasta earlier and store separately in fridge, combine before serving) Makes 12 small portions.
