Introduction
A delicious and simple recipe, can be used as either a side or as the main dish. This can also be a one-pot dish if you cook the noodles, drain, then use the same pot for cooking the veggies (which is what I do). Ingredients

-one pkg of Whole Wheat (or Whole Wheat Blend) Egg Noodles
-3 Tb of Smart Balance Omega Light Buttery Spread, separated
-one small head of red cabbage, shredded
-one medium onion, chopped
Directions
1. Cook the noodles per the instructions on the package. Drain and set aside.
2. Heat 1 Tb of butter spread over medium heat in a small pot. Add onions and cook for two minutes, stirring occasionally.
3. Add cabbage and one Tb buttery spread. Cover. Cook for five minutes, stirring occasionally.
4. Reduce heat to low. Cover and cook fifteen minutes, stirring occasionally. This will leave the cabbage at a similar firmness as the noodles; if you prefer your cabbage firmer, remove the cabbage from heat earlier.
5. Remove from heat. Add last Tb of buttery spread and noodles. Stir to combine thoroughly.
Makes twelve servings.
