Introduction

My grandmother's very simple recipe adapted for vegetarians (she adds hamburger). My grandmother's very simple recipe adapted for vegetarians (she adds hamburger).
Number of Servings: 4

Ingredients

    2 cans stewed tomatoes (15.5 oz each)
    1 cup elbow macaroni (uncooked)
    1 medium onion diced or julienned
    water

Directions

Saute onions until soft. Add tomatoes with juice, macaroni, and enough water, to cook the macaroni (be conservative, more can be added if needed -- if you like a thicker broth be extra conservative, if you like a soupy broth you can always add more). Cook until desired consistency of macaroni is reached. Salt / pepper to taste.

(For non vegetarians lean hamburger can be sauted with the onions. For vegetarians who want added protein, cannenelli beans add a nice texture and delicate flavor. Or vegetarian "meat" crumbles can be used)
